Jamaican Stew Chicken Recipe


  • Chicken
  • Grace Browning Caramel Sauce
  • West Indian All-Purpose Seasoning
  • Soy Sauce
  • Onions and Garlic or Garlic Powder
  • Oregano
  • Black Pepper


  1. Add all ingredients in teaspoon amounts
  2. Sear the chicken in very hot oil
  3. Throw away excess oil when done
  4. Add two cups water, along with onion and diced garlic and more All-Purpose Seasoning
  5. Add seared chicken into the boiling pot
  6. Cover, let stew at medium heat, and heat for 45 minutes to 1 hour
  7. If gravy drying out, add a little more water until the chicken is tender or inside the meat is white
  8. Add Hoisen sauce if desired
